Chocolate Super Berry Mousse

A chocolate mousse with a twist!


  • 125ml boiling water
  • *8 English Tea Shop Super Berries tea bags
  • 5ml Powdered Gelatin
  • 80ml Soft Brown Sugar
  • 175ml Whipped Cream


  • Pour the boiling water over the tea bags and let it brew for 5 minutes, squeeze the tea bags to  extract every last bit of flavor.
  • Add Gelatin to the mixture and let it dissolve well and then add the milk.
  • Place a heat proof glass bowl over a pot of boiling water, add the egg yolks and brown sugar  whisk till thick and creamy.
  • Remove the mixture from the heat, add the chocolate berry mixture. Mix well and let it cool. Step Add the cream to the mixture and fold gently.
  • Pour the mixture into a separate bowl, refrigerate until it is set.
  • Enjoy with family and friends!
